The Dark chocolate balances the sweetness of the white chocolate…but doesn’t the white chocolate look great with all the tasty bits?
Cherry Pistachio Chocolate Bark
1 package (about 11 oz) good quality white chocolate
1 package (about 11 oz) good quality dark chocolate
¼ t almond extract
¾ c dried cherries, chopped, divided
¾ c salted pistachios, chopped, divided
Cover a cookie sheet or 9×13 pan with parchment.
Place Dark chocolate in a small microwavable bowl. Start by microwaving for 30 seconds. Stir well and continue to microwave in 30-second intervals until it’s completely melted and smooth. Spread out evenly on parchment. Sprinkle half the nuts and dried cherries over the top. Melt the white chocolate the same way and spread out evenly on the dark chocolate layer. Quickly Sprinkle the remaining nuts and dried cherries over the top. Allow to cool completely, about 30 minutes, then cut into pieces. Store in an air tight container.
