Chocolate Oatmeal Cookies
makes about 3 dozen cookies
1 c all-purpose flour
¼ c unsweetened cocoa powder
1 t baking powder
½ t baking soda
½ t salt
½ t ground cinnamon
3/4 c butter
1 c brown sugar
½ c white sugar
1 large egg
1 ½ t vanilla extract
1 ¼ c rolled oats
¾ c mini semisweet chocolate chips
Preheat the oven to 350°. Line a cookie sheet with parchment paper.
Stir flour, cocoa, baking powder, baking soda, salt, and cinnamon together in a bowl and set aside.
In a stand mixer with the paddle attachment, beat butter and sugars together until light and fluffy. Beat in egg and vanilla. Mix in oats and chocolate chips.
Drop spoonfuls of dough onto prepared cookie sheets.
Bake about 8 to 9 minutes or until edges are just turning golden. Remove to a wire rack to cool completely.
